Pickled onions - the easy way ✨

Hey Reader,

Spring is right around the corner (despite what this current cold spell suggests) and summer is right behind it. This is the time of year when I like to focus on making feel-good salads and homemade dressings. Salads are a healthy option so you can continue to reach your #bodygoals. They’re light so they are great meal to complement the heat. They’re also incredibly versatile. They never get old.

No matter what kind of salad I’m craving, there is one super simple ingredient that nearly always makes the cut. Pickled red onions. They add just enough acidity and crunch to make any salad twice as interesting as before, and I’m not even a huge fan of (raw) onions. Trust me!
